I get the avoidance of talking about this challenging topic. And I’ve also learned that community is so incredible and together we truly are better. Joey has been developing a semolina hoagie roll for a long while even traveling to Philly, NYC and various other regions - all in search of the perfect roll and the perfect filling ratio!

This class is an in depth, participatory (if you want) discussion of how wine is actually made! We'll discuss sparkling, white, orange, rose & red and an overview of natural vs conventional wines. Tasting of 4-wines (or more) plus small snack plate of cheese & crackers will be included. Location will be in Ballard - exact location will be determined by the number of participants (either the shop or my house).

Growing up in Vietnam, we always longed for the familiar flavors of home after moving to the U.S. When we relocated to Spokane, we realized that if we wanted to enjoy authentic Vietnamese food, we’d have to make it ourselves—and share it with others. That’s how Calmette Viet was born.
We don’t come from culinary backgrounds, but we’re deeply committed to recreating the flavors we grew up with, from carefully selecting ingredients to using traditional cooking methods.
Our journey has included cooking at Feast World Kitchen, a local nonprofit that supports immigrant chefs, hosting pop-ups at breweries, operating a food truck, and even teaching cooking classes.
At the heart of it all, we’re just two Vietnamese folks hoping to share our culture through food. Because Vietnamese cuisine is so much more than just Phở and Bánh mì—and we’re excited to bring that full experience to our community.
